The Finca La Joya Estate in Marcala, Honduras is nestled along a mountain ridge where trade winds from the Pacific and Atlantic oceans merge and create an arid microclimate. Grown at 5,315 — 5,577 feet, the coffee cherries are honey-processed, which means they're picked at their ripest, fermented for 48 hours and dried on African drying beds without being washed.
